Then bottles are left to rest \u003cstrong\u003eat the very bottom of the chasm\u003c\/strong\u003e, in the most perfect ageing conditions imaginable. No light, perfect humidity and pressure. We call it extreme cellaring. \u003c\/p\u003e\\n\u003cp\u003eIt took four hours to retrieve a single bottle for tasting.
